Quick question - If I wanted to get married after getting into college, would I have to go through the whole ceremony and wedding planning or just a simple, private wedding somewhere random?

You can f2b marriage. All you have to do is change your last name in game. You don't need an official ceremony or anything as far as I know or have heard. I've seen a lot of marriages done outside of the church where the users just do their bit and then change their last names.
