Dolphin is the best one. All people play with it. We had 100s of dolphins. you can spend all your playtime only in water doing fish stuff.

Bird is worst. You fly, get faster speed attribute cap with it, you can gang rp as tamed animal (stalking, clawing, patrolling), you can make amazing media records, lay eggs. So definitely go for dolphin
